Like any true millennials, Mat and I really love avocado toast. Heavy emphasis on really.
We were a little behind on the times, though, and only got into it recently. By “recently” I actually mean “within the last 3 weeks.” In those three weeks, I think we’ve eaten at least two slices of avocado toast per person, once to twice a day.
My addiction has gotten so bad that I’ve actually started making it at work… I truly cannot escape it. When my friend from the Bay Area was visiting, Mat made her some of our avocado toast and she fell in love. So I thought to myself, “No one asked for it, but why not post our recipe online!??”
List of Ingredients:
- 1 slice of bread
- 1/2 avocado (maybe 1/3)
- 1 extra large egg
- Cooking oil
- Salt and pepper

Directions:
Step 1: Begin by halving the avocado, followed by removing the pit. We have found that the easiest way to remove the pit is to strike it with the knife (please be careful!) and twist it loose. Carefully remove the pit from the knife to throw away.
Step Two: Proceed to remove the avocado from the skin. Place the avocado into a bowl.
Step Three: Using a fork, lightly whip the avocado to give it a little air and fluff. Do not over-whip the avocado.
Step Four: Putting the whipped avocado aside, proceed to turn on the stove to medium heat. As the pan gets hot, sprinkle a pinch of salt into it.
Step Five: Once the pan is hot, spray the cooking oil, and then wait ~10 seconds for the oil to warm.
Step Six: Crack the extra large egg into the pan and then place the slice of bread into the pan a few seconds later. The bread and egg take about the same amount of time to cook. Use the slice of bread as an indicator.
Step Seven: Periodically check the toast to see if it is toasted. When the bread is nice and brown on one side, flip it. Then flip the egg.
Step Eight: When the bread is toasted on the second side, carefully remove it from the pan and plate it. Proceed to spread the avocado onto it.
Step Nine: Sprinkle salt and pepper onto the avocado spread.
Step Ten: Remove the egg from the pan and carefully place on top of the avocado toast. Remember to turn off your stove!
